Ingredients – Meatballs
1lb ground grassfed bison (or beef)
1/2lb hot pasture raised Italian pork sausage
1/2 large shallot minced
3 cloves garlic minced
Small handful parsley minced
Salt, pepper, any seasoning , I used savory spice pine rub 1 large egg
1/3 cup breadcrumbs
Sprinkle of grated parmesan
Ingredients – Sauce
1 large can crushed tomatoes
1/2 white onion, rough chopped
3 cloves garlic
Basil, thyme , any fresh herbs
Salt, pepper , red pepper flake
Directions – Marinara Sauce
1) Place all ingredients into a medium saucepan, cover & simmer at least 1 hour
2) Place sauce into a blender and puree until smooth. 3) Season to taste
Directions – Meatballs
1) Mix (don’t over mix) and form into meatballs.
2) Brown on all sides in a skillet, do not over-crowd the pan. 3) Add to marinara sauce and simmer for 10 minutes with the lid on 4) Serve over your choice of starch. Goes well with rice, pasta, squash or anything else you like!
